the best vegan sandwich ever

One of my coworkers, Khevna, sometimes brings in these sandwiches her mother makes. They are delicious, filling and bring the heat, but the peanuts and grapes in the sandwich give flavorful bursts of delight. As a child my family had potato pancakes often, but this takes it to a new level.

Khevena’s Mom’s potato sandwiches

Bread any kind
Boiled mash Potatoes 2-3
Dabeli masala(pre made at any Indian store)
Sweet chutney(grind up cranberry jelly ½ cup with 1/4 cup water)
Garlic chutney(grind up 5-6 garlic cloves, 1 tsp red chilli powder, salt, 3-4 tbsp water)
Green chutney (grind up cilantro 1 cup, 2 green chillies, salt, 2 tsp lemon juice, little water)
Cumin seeds – 1 tsp
Onions – for garnish (1 small)
Peanuts (half cup)
Grapes/pomegranates (handful)
Oil/butter -2 tbsp
Lemon juice

To make the filling:
Heat oil/butter in pan
Add cumin to sputter
Add 2 tbsp dabeli masala, mashed potatoes , Salt/Lemon(to your taste), 3 tbsp water
Cook for 2-3 mins till it mixes well

To make the sandwich:
Cut the bread into half and toast it on pan with butter/oil
Spread chutneys on one half of the bread
Spread some filling on it
Sprinkle some onions, peanuts, grapes/pomegranates
Make a sandwich and enjoy

I could never make this myself, but I can testify to it being delicious, and the UNIX team agrees!
